Spring Preserves - Rhubarb Jam and Asparagus Pickles

Marisa McClellan joins us this summer for another round of canning classes. In the the first of four workshops on seasonal canning, the May class will be a sweet and savory pair in rhubarb jam and asparagus pickles. 

Marisa will walk you through the steps of turning ruby stalks of rhubarb into jam and transforming crisp stalks of asparagus into pickles. She'll also show you how to safely seal the jars so they're ready for your pantry shelves. All students will go home with a recipe and canning details, as well as the product made in class that day.

Marisa McClellan is a full-time writer and canning teacher, as well as the sole blogger at Food in Jars. She is the author of "Food in Jars: Preserving in Small Batches Year-Round" (Running Press 2012) and "Preserving by the Pint: Quick Seassonal Canning for Small Spaces" (Running Press 2014).
