Spinach Stromboli

  • ½ ball prepared pizza dough
  • ½ cup ricotta cheese
  • ½ cup mozzarella cheese
  • 1 tbsp.Italian seasoning
  • 1 cup frozen spinach, defrosted
  • 1 tsp. garlic powder
  • 1/4 tsp. red pepper flakes
  • 1 large mushroom, sliced
  • Salt and pepper to taste
  • Olive oil


Preheat the oven to 425°

Let the pizza dough rest in a covered bowl on the counter for an hour or more while you make the filling. Squeeze out as much water as possible from the spinach, then add to a mixing bowl along with all the other filling ingredients (leave out the mushroom slices). Taste for seasoning.

Roll the pizza dough into a rectangle. Spoon the filling into the middle, bring the two sides to the middle and pinch the ends to close.

Place the prepared stromboli on a parchment-lined baking sheet. Brush the top with olive oil and lay the mushroom slices on top. Bake for 25mins until the bottom is golden brown.
