This is a pretty versatile dip. You can add chopped dill or chopped mint for variety. You can also make the recipe using 32 ounces of a good Greek yogurt instead. It goes well on gyros, toasted pita, or even falafel.
- 16 oz. vegan sour cream (like Tofutti)
- 16 oz. Vegenaise
- 2 tbs. fresh lemon juice
- 1 tbs. finely minced garlic
- 1 large English cucumber, seeded and finely chopped
Mix all ingredients well to ensure all is incorporated. Add salt and pepper to taste. Enjoy!
